Parental Supervision Required **Attendees should bring their own knives if possible**
Help contribute to the feast by learning the basics of safe knife handling and an array of useful techniques for preparing food.

9AM Classroom 2 ~ Medieval Table Manners – How to Feast in a More Period Way Without Sacrificing Sanitation ~ Baronowa Alzbeta Michalik, OP
Parental Supervision required
This class will start with an overview of feast table manners in 15th Century Western Europe. This will lead into a discussion of how feast attendees can eat in a period style without sharing their germs, as well as how feast stewards can serve their feasts to encourage a more medieval experience.

9AM-Noon, Kitchen ~ Zen Bread Workshop ~ Mistress Berengaria Mordaunt, Baroness Shattered Crystal
Adults and children 12 and over welcome
A basic bread-making class, focusing on a more organic approach to the art.
We will literally get a feel for bread dough. We will knead up and bake a couple of different loaves, examining how varied ingredients, scoring, and baking techniques affect the finished loaf.

14th century Italian discussion of methods products and equipment used to clean and sanitize cooking facilities dishes and equipment and halls in Trento

Afternoon Block

1-4pm, Firepit ~ Cooking On An Outdoor Fire ~ THL Heregyth Ketilsdottir
3-hour class. Adults Only
Will include demonstrations and hands-on activities. Topics: building and starting the fire, pan-baking flatbreads, spit-roasting, slow cooking with coals.
Students welcome to come and go as topics change or stay for the whole class

2PM Classroom 1 ~ Incorporating Edible Heraldic Colors into Feast ~ Lady Clara van den Broucke
Parental Supervision Required
Learn a fun way to celebrate your kingdom, barony, shire, etc. by incorporating colors into your dishes at feast.

2PM Classroom 2 ~ Feast Crisis Management ~ Mistress Gwyneth Banfhidhleir
Group discussion about what to do when a feast goes completely sideways. Stories of past feasts and event failures and lessons learned

3PM Classroom 1 ~ Beyond Cook Books ~ Mistress Helewyse de Birkestad
Centered mostly on 16th century Italian this class will outline how to find out information that is missing in the cookbook. From bread recipes, to drinks, salads and more. Even our most comprehensive cookbook from the era (Opera by Scappi) has some huge gaps. But by widening our search outside of the cookbook we may find answers to our questions. I may also (if there is time) discuss how to plan a feast when there isn’t even a cookbook.

3PM Classroom 2 ~ Feast from Inception to Dishes ~ Lady Clara van den Broucke, Baroness Hillary of Langeforde and The Honorable Lady Oda Umi – Domo
Two hour class. Parental Supervision required.
The class will cover how to develop, create and serve a feast from the point of view of the Head Cook, the Expediter and the Head Server. We will discuss best practices for each position as well as how those three crew leaders work and communicate together to bring a feast vision to reality.

Parental Supervision Required
Join the Barony of Illiton to decorate the hall for feast!

During Feast – 6pm

Feasting More Medievally ~ Baronowa Alzbeta, OP
Parental Supervision Required. ***Feast ticket is required***.
We will be setting a table aside during feast for a hands-on opportunity to try out a more medieval style of eating. Sign up will be available on the seating chart for feast.
Limited to one feast table, unless interest is enough to include more tables
